When 350mm Is Enough
The honest answer: if you’re regularly turning over more than 150 pints and shorts combined on a Saturday night, you should probably be looking at a 500mm machine. But for micropubs, small community locals, wine bars, or any site where a single bar session means 60 to 80 covers maximum, a 350mm unit is entirely sufficient.
These machines typically handle around 20 to 25 baskets per hour. A standard basket takes six pint glasses or nine wine glasses. Do the maths for your own operation. If your Friday night glass throughput comfortably fits inside those numbers, you’re not compromising by going smaller. You’re making the sensible call.
Space is the other factor. Cycle time. Budget units can run 3-minute cycles. A decent machine should be hitting 90 seconds to 2 minutes. When your bar gets busy, cycle time is the difference between keeping up and falling behind.
Temperature. Wash temperature around 55°C, rinse at 82°C minimum. That rinse temperature is what gives you the heat that kills bacteria and leaves glasses coming out dry and clear rather than streaky and damp.
Water consumption. Smaller machines can still be thirsty. Check litres per cycle. Anything over 3.5 litres per cycle on a 350mm unit is on the high side.
Build quality on the door and basket runners. These are the first things to fail on cheap machines. Get your hands on the unit if you can before buying, or read reviews from actual operators rather than specifications sheets.
The drain pump rule. This applies to every glasswasher regardless of size: always spec a drain pump. A machine relying entirely on gravity drainage will give you problems the moment your drain isn’t perfectly positioned or gets a partial blockage. A drain pump costs almost nothing extra and removes one of the most common failure points in bar equipment. Do not skip it.
