UK pub GP benchmarks — what you should be targeting
Draught beer & cider
58 – 65%
Lower margins due to ullage, wastage, line cleaning. Target 62%+ for a well-run cellar.
Spirits & liqueurs
72 – 78%
Higher GP potential. Premium spirits can push above 80%. Watch free-pour accuracy.
Wine & prosecco
65 – 70%
House wine by the glass typically 65–68%. Bottles lower. Watch wastage on open bottles.
Soft drinks & mixers
75 – 82%
Highest GP category. Under-pricing soft drinks is a common mistake — they have the best margin.
